Wild Honey Cocoa Recipe
Nothing says celebrate quite like whipped cream, right? I mean, how can you not get excited when you see swirling puffs of cream with sprinkles!? It makes me smile! When planning the Queen Bee Luncheon I wanted to offer an extra special treat to end the celebration on a sweet note and this Wild Honey Cocoa was perfect!




Best of all, it's quite simple to make. Here's the recipe:


:: Wild Honey Cocoa Recipe ::

7 cups milk
1 cup half & half (makes it even creamier!)
1/2 cup unsweetened darkcocoa powder
1/2 cup wild honey (doesn't have to be wild, any kind will work)
1/4 teaspoon sea salt
whipped cream for topping
gold sparkling sugar for topping


Yield:  4, 2 cup servings.

Not sure how much cocoa you need to prepare in order to fill your mugs? Easily check your mug capacity with this simple method: Fill a glass measuring cup with 2 cups of water and pour it into one mug. Note the amount of water you have left in the measuring cup and subtract. My mugs are tall and held a full 2 cups. Once you know your individual mug capacity, multiply that number by your number of guests.


:: Directions ::
Combine cocoa powder, salt and about 1 cup of milk in a pot over medium heat until you've got a smooth and thick paste. (Cocoa powder doesn't tend to dissolve easily in liquid so making a paste and slowly adding liquid to it really helps make it come together more easily.) Slowly whisk in remaining milk and all of the half & half and honey. Heat cocoa over low heat until heated through. I don't like to boil my milk as this will often produce a milk “skin” so I watch it very carefully.

Once cocoa is heated, pour into mugs and top with whipped cream and sprinkles. Serve immediately as whipped cream will begin melting right away.

  2. Homemade hot cocoa is my very favorite comfort food. Our local organic store is now carrying raw milk which is thick and rich with heavy cream on the top and makes the best cocoa, ever!! Yes, I am a cocoa connoisseur – Hehe! But, I’ve never made it with honey.

    Just a little tip….heating honey takes away some of its beneficial properties. So, to help an allergy…have it raw. Yummy too!

    The Queen Bee party was perfect. Wish, at the very least, I could have enjoyed it as a little bee on the wall 😀

    And…you are certainly the Queen of tablescaping and all those incredible details.
