Back when I was planning weddings and events full time I had a couple of caterers whom I loved to work with, and one of them used to make Parmesan puffs that I could never get enough of. I didn’t get her recipe, but I still crave them, so today I decided to step into the kitchen and try mixing up a similar batch. I really like olives and while her recipe didn’t include them, I decided to incorporate some into mine. So without further ado, I present my Olive Parmesan Puff recipe.
For the base of the puffs, I used a heart shaped cookie cutter to cut hearty white bread into bite-sized pieces.
These little slices are cute for so many recipes. I know it’s almost Valentine’s Day and hearts are on our minds, but honestly, I think these would be cute year-round. Once they are cut, lightly toasted them.
While the bread is toasting chop up the olives and onions.
Add mayonnaise and Parmesan cheese to the bowl and stir to combine. Place a small amount of mix onto bread and toast until lightly golden.
Lightly toasting the bread before topping it helps it to stay crunchy and not get mushy. This way they have a delicious crunch that is irresistible.
- Hearty white bread (sliced)
- 1 T minced onion
- 1 T chopped olives
- 1 T mayonnaise
- 1 T+ shredded Parmesan cheese
- garlic pepper to taste
- Use a cookie cutter to cut sliced white bread into bite sized pieces.
- Lightly toast the bread.
- While bread is toasting, combine onion, olives, mayonnaise, and cheese in a small bowl. Spread a little bit of the mix onto the toasted bread.
- Place on a foil lined baking sheet and toast again until golden brown.
- Serve warm and enjoy!
