Remember yesterday’s power seed blend recipe? I mentioned that it is an easy addition to lots of meals (I loved Marisa and Gina’s breakfast suggestions in the comments – great ideas for sneaking in more seeds!) and today I’m sharing one of my favorite go-to lunches in a hurry. My simple Tomato Avocado Salad recipe. This is such an easy meal and yet it still feels kind-of special to me. It’s funny how just a few ingredients can come together to make something delicious, I almost feel like it needs to be more complicated but here simplicity is truly best!
All you need is one creamy avocado, a few vine-ripened cherry tomatoes (these were courtesy of my neighbor who has been enjoying an abundant harvest and kindly shared some with me! Thanks!!) and those wonderful seeds which add just the right amount of crunch and texture to this salad. A drizzle of your favorite avocado dressing and you’re done! Too easy, right?!
I really love how the seeds and avocado play off of each other… and the tomatoes add a wonderful sweetness, completing this trio. You could add all kinds of other ingredients, some cheese, thinly sliced red onion, perhaps a few greens, but the beauty of this salad to me is that it doesn’t feel “incomplete” without those extras. It’s delicious as it is, pure and simple.
For me, one half of the avocado is never enough – plus, have you heard the latest research findings that Avocados have cancer fighting properties? I really love avocados (especially when turned into guacamole!) so I’m thrilled to have one more excuse to indulge in this delicious green fruit!
