In the Coffee on the Go post that I shared recently, I gave you a sneak peek at my Easy No-bake Energy Ball recipe.
Today, I wanted to properly introduce you to this no-fail treat.
There are many names floating around cyber-space for these tasty hunger tamers. I've often seen them called Oatmeal Power Balls, but “Energy Balls” are my favorite because for me they do just that – give me energy!
And they help me in-between meals not to dive headfirst into a bag of potato chips (one of my comfort foods of choice!).
They are simple to make – you know me, I don't like difficult recipes – simple and delicious is my speed!
Because they are easy to make, I try to keep them on hand for a quick breakfast on the go or for those times when 3:00 p.m. rolls around and I'm starting to get “hangry” (oh yes, it's real!). These help me happily hang on 'til dinner time 🙂
Above are the ingredients that I use to make my Easy No-bake Energy Balls.
You may notice these are a little different than most of the recipes that you find online.
Many Power Ball recipes call for honey, which is a great “binder” for the oats, but I'm trying to keep my carbs low so I skip the honey here and add some more peanut butter instead. It does a great job of making everything “stick” together.
I also use liquid Stevia – again in place of the honey. And please, don't get me wrong, I love honey, I just choose to use it a bit more sparingly. The Stevia makes everything just as sweet for me but without the calories! Yay!
Now, because I'm not a complete sugar ogre, I do add a few of my favorite butterscotch morsels. You could use chocolate chip, white chocolate, or any other chip you fancy.
For me, the key is to use just a FEW. That way I'm still getting a little hint of a favorite flavor but without it derailing all my best-laid eating plans!
As you can see, this recipe is very easy to tailor to your particular tastes.

Grab your favorite wooden spoon or spatula and get ready to Stir Up Some Good Times!

You can see the crowd gathering as it got later and later. I'd never gone to a midnight Black Friday (on Thursday) sale before. What a fun, crazy memory that was!
Sorry for getting side-tracked! OK, got your ingredients ready? Great!
Dump them into a bowl and stir to combine.
Cover with saran wrap and let the mix chill for about 20-30 minutes.
They form into balls much more easily if you do this – but I will admit to absolutely eating some before they chill.
Once the mix is nice and cold, scoop them out and form them into balls.
All rolled up? Great!
Now, eat a couple, they are delicious after all and store the rest in an air-tight container in your fridge.

Here's my recipe. As I mentioned, this recipe is easy to customize so I encourage you to play with it and find your own perfect mix!
Easy No Bake Energy Balls
Note: the "cook" time listed is actually the chilling time. 🙂
- 1 cup Oatmeal uncooked, I used old-fashioned oats
- 1 cup Peanut Butter more if it's not sticking together enough
- 1/2 cup Irish Quick Oats
- 1/2 cup ground Flax Seed
- 1/4 cup Butterscotch Chips
- 3 donks Liquid Stevia
- 1 Tbsp Chia Seeds
- 1 tsp Vanilla Extract
- Stir all ingredients together until thoroughly mixed.
- Chill for approximately 20 - 30 minutes.
- Form into balls.
- Eat, enjoy and store any extras in the refrigerator.
