:: Wild Honey Cocoa Recipe ::
1/2 cup unsweetened darkcocoa powder
1/2 cup wild honey (doesn’t have to be wild, any kind will work)
1/4 teaspoon sea salt
whipped cream for topping
Yield: 4, 2 cup servings.
:: Directions ::
Combine cocoa powder, salt and about 1 cup of milk in a pot over medium heat until you’ve got a smooth and thick paste. (Cocoa powder doesn’t tend to dissolve easily in liquid so making a paste and slowly adding liquid to it really helps make it come together more easily.) Slowly whisk in remaining milk and all of the half & half and honey. Heat cocoa over low heat until heated through. I don’t like to boil my milk as this will often produce a milk “skin” so I watch it very carefully.
Once cocoa is heated, pour into mugs and top with whipped cream and sprinkles. Serve immediately as whipped cream will begin melting right away.
I found this honey at my local grocer and was delighted by the honeycomb inside!!
I love the golden sprinkles on top because they provide a hint of the sunny golden color of honey 🙂
