Shortcut Cookie Recipe {Chocolate Peppermint Sandwiches}

Happy first Monday of December! The holiday countdown clock has officially begun and we are 20 days from Christmas! Can you believe it’s here already? I can’t!! So much still to do… gifts to make and buy, decorating to finish, plus baking to do!

I love Christmas and I love making beautiful Christmas cookies to eat and share but I don’t have a lot of time these days so I’m all about yummy shortcuts like this one for my Chocolate Peppermint Sandwiches. Store bought ingredients mean they don’t take long to make but it looks like you’ve spent hours baking. I call that good “wow factor”!

These cookies remind me of a mint-chocolatey big wheel! The crushed peppermint looks so festive. This filling doubles as a truffle base which I will share with you soon!

{Chocolate Peppermint Sandwiches}
Makes 25 sandwich cookies

Ingredients:
50 chocolate wafer cookies
16 ounces milk chocolate chips
2 cups confectionery sugar, sifted
2 teaspoons mint extract
3 ounces crushed candy canes

1 – Melt chocolate chips in a glass bowl in the microwave in 30 second intervals. Once melted, stir in sugar and mint extract.

2 – Scoop mint cream mixture onto wafer. Top with another wafer and press slightly to push icing to edges.

3 – Pour crushed candy canes onto a plate. Roll each cookie in crushed candy to coat sides.
