I was recently in World Market and found these sweet little Meringue Cups and couldn’t resist picking them up. I wasn’t exactly sure what I would make with them but knew that something would come up! Well, while concocting the Sweetheart Spritzers yesterday I had quite a bit of Champagne leftover and suddenly got an idea to make a Champagne Dessert Recipe and created these little Champagne soaked poundcake treats. YUM!
:: INGREDIENTS ::
1/4 cup Raspberry Jam
2 Tablespoons Champagne
1/4 of a Pound Cake
In a small sauce pan, heat Raspberry Jam and stir in Champagne just until thin and warmed. Meanwhile, chop pound cake into cubes and place them in a small bowl. Pour jam/champagne “sauce” over cubed pound cake. Soon pound cake into meringue cups. Top with a dollop of fresh whipped cream and a few fresh raspberries.
I’m not normally a big dessert eater but I have to tell you these are scrumptious! The crunch of the meringues with the sweet sparkle of the champagne drenched pound cake and the tang of the fresh raspberries. It’s a delectable combination! And like so many of my recipes – easy to prepare!
