{let’s make some} Fried Chicken & Waffles!

In the early 1990’s I lived in Los Angeles for a few years and while there were many, many restaurants where I loved to eat – one that stands out in my mind is Roscoe’s House of Chicken & Waffles. Now, being the good southern girl that I am, I know fried chicken. My grandma used to make fried chicken every Friday night and let me tell you – it was delicious! But we had never mixed it with waffles…? This sounded crazy. But once my sister Lisa introduced me to Roscoe’s I couldn’t understand how I’d ever lived without it! Something crazy good happens when these two classics come together.

Now I don’t always have time to fry up chicken like my grandma made. It is an investment – a worthy one – but investment none the less. At these times I rely on a good breaded chicken tender, like the Bell & Evans organic breaded chicken tenders. They are tasty & quick to prepare. Perfect! I fry mine in a bit of canola oil for 5 minutes on each side & done. Too easy!

Now, it’s true you can also use a frozen waffle to make this a super speedy dish but with minimal effort you can create fluffy waffles in a snap. Here’s my recipe:

Easy Buttermilk Waffles:
2 cups Bisquick
1 3/4 cups Buttermilk
1 teaspoon Baking Soda
1 Egg
1 teaspoon Vanilla

{note: I love using a shortcut mix like Bisquick but when you are using Buttermilk with it you have to make a few adjustments. So don’t strictly follow the box – add the baking soda & only 1 egg. Also, I love the flavor of vanilla and added it here but you don’t have to. It’s completely optional.}

:: Step 1 ::
Preheat your waffle iron. In a large bowl stir together all ingredients. Pour batter into waffle iron (amounts vary, on mine it’s just under a 1/4 cup of batter per waffle), wait approximately 3 minutes. Open and observe your glorious waffle!

{note: Some recipes will tell you to apply melted butter to your waffle iron before adding the batter – my iron has a non-stick coating and performs better when I don’t add any kind of butter or spray. So, play with yours to see how it works for you.}

:: Step 2 ::
Place waffle on your plate, pile on chicken, drizzle with syrup and enjoy the sweet & savory & crunchy deliciousness that is Fried Chicken & Waffles! Add a mixed green salad and you are done with dinner in no time flat.
