I love the BBQ Chicken Pizza at a certain restaurant (not sure if I should name names….) but when I buy the frozen kind in the grocery store it never tastes how I wish it would… I don’t have this restaurant in my town so it’s not like I can just hop in the car and get one when I like so I decided to try making it at home and boy am I glad I did! Not only is this easy – I promise, it is! – but it is also dee-lish! If I do say so myself :-) Now yes, it’s not as easy as tearing open the cardboard box of a frozen pizza or dialing your local delivery store but those two options have never given me the same result as this tasty little recipe! Don’t believe me? Read on and try it for yourself!

:: Ingredients ::
1 pack       Pizza Crust Mix (I use Martha White – Thin & Crispy brand)
1 Tblspn   Italian Seasoning
1/2 cup     Hot Water
drizzle       Olive Oil
1 Tblspn    Flour
1 cup          BBQ Sauce (I use Sweet Baby Ray’s)
1 1/2 cups Shredded Mozzarella cheese
2 Tblspn   Coarsely chopped Red Onion
1/2 cup     Coarsely chopped plain Rotisserie Chicken (I used white meat)
1/4 cup     Chopped Cilantro
3 Tblspn   Crumbled Chèvre (Goat Cheese)

Please don’t be intimidated by this list of ingredients. It’s all really simple – promise. By the way, these measurements are meant to be a guide. Play with it and add more or less according to your taste.

:: Step 1 ::
Preheat your oven to 475° (450° will work too). Let’s start with the Pizza Crust mix. Yes, you could buy a pre-made crust but this one is sooo much tastier and it takes hardly any time at all. Take your crust packet and empty it into a medium/large bowl. Add in your Italian Seasoning and water. Stir until it’s all combined (it kinda looks like a gooey blob of dough). Drizzle with a little Olive Oil and cover with a towel. Let this sit for at least 5 minutes.

:: Step 2 ::
I like to chop up my toppings while the dough is rising. Once that’s done, you sprinkle flour onto your pizza pan and scoop your dough on to the pan. Using your hands spread the dough out until it’s a fairly even layer covering the pan. Pop this in to your preheated oven for about 5 minutes. {I love all the flecks of seasoning in the dough! – you can really see it in the photo below}

:: Step 3 ::
Take your pre-baked crust out of the oven – it won’t be totally done yet – and let’s pile on the toppings! To begin cover the dough with the BBQ Sauce. (I recommend a sweet sauce not a mustard or vinegar type – but that’s just me.) Next layer on the shredded mozzarella cheese. Top this with your onion, chicken, cilantro and crumbled chèvre. Drizzle a teeny bit more BBQ sauce on top and pop it all in the oven for approximately 10 minutes. Oven temperatures vary so watch it to be sure it doesn’t burn.

That’s all there is to it! Using some easy store bought ingredients you really can put together a gourmet style pizza that doesn’t require special gourmet skill! I really hope you try it and let me know how you like it. It’s a sweet & savory flavor which may not be to everyone’s taste but if you like BBQ you will probably love this just like I do! And the chèvre cheese really adds an element of creaminess with a bit of tang that makes it perfect!
