Vanilla Cupcake with Pink Lemonade Frosting

To round up this week of big announcements and accomplishments with the magazine, my little one and I decided it would be fun to bake some cupcakes! Cupcakes are such a fun way to celebrate, don’t you think? They’re easy to make and you can freeze the un-frosted ones for a super-easy everyday treat-in-a-hurry!

For these cupcakes we mixed up a box of Duncan Hines Yellow Cake mix and baked them in two Mini Fluted Tube Pans. The pans are kind-of like a mini bundt pan except that it doesn’t have the center post. {I adore the fluted edge it creates!!} The cakes are a generous serving for one, definitely bigger than a standard cupcake :-)

Then we mixed up some homemade frosting. Here’s my recipe:

  • 2 cups of powdered sugar
  • 1 cup softened butter
  • 3 Tablespoons Half & Half cream
  • 3 Tablespoons Pink Lemonade Mix
  • 1 teaspoon Vanilla extract
  1. Using a mixer with a whisk attachment on the low setting, combine softened butter and powdered sugar in a large bowl until thoroughly combined. Increase mixer speed to medium and whip up for a couple of minutes.
  2. Combine pink lemonade mix with half & half cream and vanilla to dissolve the crystals in the drink mix – you may need to add a tiny bit more cream. (Skipping this step can give you a frosting that is a bit “grainy” because of the crystals – lesson learned the hard way!) Add lemonade, half & half and vanilla mix to the powdered sugar and butter and beat for another minute or so.
  3. You can set this in the fridge to set up for a few minutes for a slightly “stiffer” consistency. We couldn’t wait to eat ours so we skipped that step – hence the soft-style frosting in the photos – it was still tasty!
  4. Scoop frosting into a plastic bag and fit it with a decorating tip for pretty piping! I used a #12 Wilton tip.

I love lemons and I love pink so this was a very sweet way to celebrate such a special week! And the soft hint of pink that we got from just the pink lemonade mix makes me smile! Note: you could add a couple drops of food coloring if you want an even brighter pink.
