Have you started thinking about your Easter menu yet? Today, I’m excited to share a delicious recipe that is so simple and looks very elegant for each guest: a mini Lemon Meringue Tart! These little beauties are quite simple and I must say, quite tasty!
:: INGREDIENTS ::
1 – 8 ounce package of cream cheese
1/2 cup (4 ounces) lemon curd
yellow food coloring, if desired
This recipe will make 8 mini lemon tarts.
:: STEP ONE ::
Combine cream cheese and lemon curd in a medium bowl until creamy. I used a hand mixer to get the creamiest consistency. I added a bit of yellow food coloring to mine to enhance the color. Place bowl in refrigerator and allow to chill for about 15 minutes or so. You can make this a day ahead and assemble shortly before serving.
:: STEP TWO ::
Place a layer of raspberries into the base of each meringue cup then top with chilled lemon curd & cream cheese mixture. You can pipe yours if you’d like.
Here’s my simple DIY piping kit: one plastic baggie + a piping tip set (I used Wilton’s #21 tip)
:: STEP THREE ::
Preheat your broiler. Meanwhile, top each meringue cup with 4 mini-marshmallows. Place tarts on a baking sheet and place under broiler until marshmallows lightly brown. Watch these VERY closely so that they don’t burn (or catch on fire!). Then top with a single raspberry. Voila!
The creaminess of the lemon curd is a delicious contrast to the crunchiness of the meringue and there is something so delightful about raspberries and lemon, don’t you agree? But the lightly toasted marshmallows really steal the show in my opinion!!
