One of my favorite foods in the Fall and Winter months is soup! I’m constantly devising new Fall Soup Recipes. When I think of soup, I get pretty excited about it actually. I really love bread too and because soup is bread’s best-friend (at least in my world!) it’s one of my “perfect meals.”
This cabbage & kielbasa recipe is constantly in my soup recipe rotation because it’s one of my go-to meals after a busy day! With a little chopping and a few minutes at a gentle boil you’ve got dinner in under 30 minutes (including hauling all the ingredients out of the fridge!). The worn-out, end-of-the-day blah’s are conquered with this savory and satisfying soup!! Bonus, because it’s a one pot soup it also makes cleanup easier! Hurrah!

:: Ingredients ::
1 head of cabbage
1 package of kielbasa (I used Hillshire Farms Beef Polska Kielbasa)
1 medium onion, chopped
1 box of chicken broth (4 cups)
1 stick of butter
1 1/2 Tablespoon apple cider vinegar
1/2 to 1 teaspoon savory herb blend
garlic salt & pepper to taste
:: Step One ::
Slice your kielbasa into bite size pieces and saute in a deep fry pan. Once kielbasa is beginning to brown add chopped onion. Continue to saute until onion is becoming translucent (image 1).
:: Step Two ::
Chop cabbage into bite size pieces (image 2) and add to pan (image 3). Slowly stir in entire box (approximately 4 cups) of chicken broth. Add in butter, cider vinegar, savory herbs and garlic salt & pepper. Because there is no raw meat you can begin to taste the broth and adjust the seasonings accordingly. Warning: Add apple cider vinegar a little bit at a time. A small amount is a perfect flavor enhancer but too much and your soup will be ruined. Trust me, I speak from experience!
:: Step Three ::
Allow soup to boil for about 15 minutes or until cabbage is tender. Heat up some biscuits and you have a delicious and satisfying dinner! (and only 1 pot to wash – yay!)
