May I tempt you with an Easy Easter Bunny Bark recipe today? ‘Cause, ready or not Easter is coming, quickly. Mostly I’m thrilled because of the significance of the day. It’s the resurrection of Christ! Hallelujah! My mom and I will be singing at three services this Sunday which will be a wonderful but exhausting adventure. Thankfully my dad is cooking a delicious Easter meal for us. I don’t know about you but this High Holy week is a super-busy week for us, so while I may have all these grand intentions about Easter in March… when it comes right down to it, I am running out of both time and energy. For my daughter’s sake, I want this to be fun, but for my sanity, I need cute, tasty, and simple all tied together – and let’s be quick about it!

White Chocolate Bark – a super easy melting chocolate
Speckled Easter egg candies
Place the speckled eggs in a bag and give them a good whack or two with a rolling pin – be careful to not smash them up too much, you want the colored shells in fairly good-sized pieces for your bark.
Pop out a few “cubes” of the white chocolate bark and place it in a microwave-safe bowl. Microwave for about 30-45 seconds, stir and microwave another 30 seconds or so, or until it is all melted. Be careful not to overheat.
It’s a really cute and easy Easter Bunny Bark recipe! Like any bark, there are a million variations and ways you can dress this up, but I’m happy with the basic version which is adorable and easy. Because right now, that’s all I have time for!
