Did you make any ‘get fit’ or ‘eat better’ resolutions yesterday? I admit, I always do! So, in an effort to get off on the right foot I whipped up this super yummy and super easy Crispy Ham & Kale Salad, a quick & easy healthy recipe perfect for the new year! I like it because it’s got all the “good for you” greens but…
… for me at least, they are the perfect compliment to the sweet and salty deliciousness which is the crispy honey baked ham salad dressing…. I could eat almost anything with this dressing! (And let’s face it, if it doesn’t taste good, I simply can’t stick with any ‘eat better’ plan for long!) Plus it’s a tasty way to reinvent any leftover holiday ham you may have on hand.
:: INGREDIENTS ::
makes two salads
1/2 cup Honey Baked Ham, chopped
1 1/2 Tablespoons sesame seeds
1 Tablespoon Garlic Stir fry oil
1 Tablespoon fresh lemon juice
1/2 Tablespoon Honey
1/2 teaspoon Dijon mustard
10 ounces Baby Kale leaves, rinsed (5 ounces per salad)
1 cup sugar snap peas, chopped
1 scallion, chopped
:: STEP ONE ::
Place baby kale leaves, sugar snap peas and scallion on a plate and set aside. Heat a non-stick pan over medium heat and add a dash of the garlic stir fry oil, the chopped ham and the sesame seeds. Allow the ham and seeds to lightly brown, stirring occasionally. This will only take a couple of minutes. Remove ham & seeds from pan and set aside (not on salad yet).
:: STEP TWO ::
Add remaining oil, lemon juice, honey and Dijon mustard to pan, whisk to combine. Heat through. Add ham and seeds back into pan and give it a good stir just to combine. Immediately pour dressing over salads and serve. Note: this dressing caramelizes pretty quickly so that’s why you want to dress your salads right away. Also note that this dressing is not meant to completely coat all the leaves, I just drizzle it on mine as a tasty accent.
Eat & enjoy with the satisfaction of knowing that not only is it yummy but you are also eating a superfood (the kale) which is providing you with a rich source of vitamins and minerals and preventing cancer! And if you don’t put too much of the dressing on there, your waist line will thank you too!
