This past week has been the biggest crunch week for me with the magazine so I apologize for being MIA the past couple of days. It’s been a lot of late nights, early mornings and everything in-between pulling it all together… but I think/hope that when you see the issue in a couple of weeks you’ll be as excited as I am.
Despite my excitement over the magazine, I’m disappointed that it’s almost Easter and I haven’t gotten to share any of the fun decorating ideas or recipes that I had planned… oh well, there’s always next year! I’m happy to at least share my recipe for simple and of course delicious Asparagus wraps.
Country Ham, thinly sliced (1 slice per bundle)
Parmesan Cheese, grated
Preheat oven to 400°. Gather asparagus into bunches (approximately six pieces each if asparagus is thin) and spray lightly with olive oil or cooking spray. Roll one piece of thinly sliced country ham around each bunch. Bake for approximately 8 – 10 minutes. Once asparagus is beginning to brown, remove from oven and immediately sprinkle with Parmesan cheese.
Serve and enjoy!
These asparagus wraps are delicious anytime of day, I even love them for breakfast with a dippy egg and french toast sticks! Yum!!
