The other day my daughter and I were in WalMart and you know how they will set up those “seasonal”displays in the middle of the aisles? Well, there was a giant display of Betty Crocker seasonal mixes that completely stopped us in our tracks. Oh my goodness, there were so many options, especially pumpkin recipe mixes. We loaded up our cart with lots of boxes to play with this season! One in particular that caught my attention was an Apple Cider cupcake mix kit! Apple cider donuts are a favorite of mine so I was especially intrigued with this flavor, but, I wanted to do something a little bit different than a cupcake – and then it hit me: hello Apple Cider Whoopie Pie! With the mix kit, this was really, really easy recipe to whip up!
Here’s the mix in case you’re looking for your own. It even comes with icing!
Place all your ingredients according to box directions in a mixer and…
… mix it up!!
Scoop the batter onto a greased baking sheet – I placed parchment paper down and sprayed that with cooking spray first. Bake for just a few minutes, maybe 5 or so – these are super thin little cakes and they cook up super quick!
Remove from the oven and get them off the pan as fast as you can because the heat of the pan will cause them to keep cooking. That’s another reason I like to use parchment paper, it’s easy to slide it off a pan without disturbing the cakes ’til they’re ready.
Snip off one corner of the icing pouch…
Flip over a COOLED cake, and squeeze the icing onto the “wrong” side.
Use a spatula to help spread the icing a bit if you like…
Top with another cake. Repeat until you have a whole bunch of these tasty treats!

Cupcakes are always a good idea, but today, we’re just in the mood for whoopie pies! Thin but still cakey, and filled ooey-gooey icing, what’s not too love?!
They’re super fun for fall and definitely something new for us which makes them extra fun!
