My little Emma turned one earlier this month and I am excited to share some of the festivities with you. In this post I want to show you the cake that my mom and I made for her. I love ruffled cakes and have posted lots of them to my Pinterest boards so I knew I wanted this cake to be like that.
And ever since watching the movie Pollyanna as a little girl I have always been fascinated with really tall layer cakes {remember the cake the cook baked for the town festival near the end of the movie? love that cake!} I found some great photos on various sites showing layer cakes that were different colors and thought this could be a fun twist! So, I decided to bake French Vanilla and Strawberry layers. I used a little food coloring to darken 2 of the strawberry cakes.
Tip: when the mix was wet it looked much darker but once they were baked the cake lightened up a lot and didn’t have the contrast I had hoped for. If I ever do this again, I will really, really make the color darker.
Mom piped on all those luscious layers for me – I was exhausted from decorating and a little intimidated – so she kindly stepped in. Thanks Mom!! I’m so happy with how it turned out – imperfections and all! I will say though that the layers were a little overwhelming to eat though. Especially for the kids – way too much cake. We were splitting them in half to make the servings a bit more realistic….
